Som Tum Thai Koong Sod - Thai Style Green Pawpaw Salad with Fresh Prawns

We can cook many different styles of this green pawpaw salad, and many people like different tastes. It can be all the ingredients to give a balanced taste, or just can taste sweet & sour.

Ingredients:
Serve 2

250g Green pawpaw
10 Bird Chillies
2 Garlic Cloves
1-2 Snake Beans
4 Cherry Tomatoes
1-1 1/2 Tablespoons Palm Sugar
4 Fresh Prawns
2 Tablespoons Roasted Peanuts
1 1/2 Tablespoons Lime juice
1 Tablespoon Fish Sauce

You may need:

Mortar & Pestle.

Preparation:

Green Pawpaw.

Peel and wash away the white liquid (it might make your skin itch).

Slice in thin strips.

Prawns - pull the heads off, peel away shells and legs. Cut along the back of each prawn and pull away and discard the dark thread.

Boil 2 cups of water in a deep small pot.

When it's boiling, add prawns. Cook until they change colour. Remove and set aside.

Heat a shallow pot, when it's hot, add 3 tablespoons of peanuts. Stirring until it smells nice, remove and set aside.

Snake beans - wash well and slice length 1 inch.

Garlic - peel and cut small.

Add the garlic with a little salt in the mortar, OR you can pound garlic, chilies, snake beans and a fraction of pawpaw at the same time.

Bird chilies - wash and take their stems off.

Add in the mortar with garlic and salt, salt will help to crush easier and also stops the chilies pop up into your eyes.

Crush roughly, the more you crush, the spicier it gets.

Add snake beans - break them roughly.

This is too good.

Add 2 tablespoons of peanuts. Not much more than this, otherwise they'll look a bit messy.

Crush roughly to well.

Add 1 1/2 tablespoons of palm sugar. You can add just 1 tablespoon first, to see if you like your salad to be a bit sweeter then can add another 1/2 tablespoon.

Fish sauce is not just fish sauce, because different brands have different tastes. This brand is my favourite brand for fish sauce, the taste is just sweet and not very salty or strong smellin like other brands.

1 tablespoons of fish sauce.

Lime - wash and squeeze the juice in a small bowl.

1 tablespoon of lime juice (you can add another 1/2 after you tasted).

Cherry tomatoes - wash and cut into half or 3 pieces each.

Add cherry tomatoes, and mix all the ingredients well. Keep tasting to see if you need to add something.

Then add sliced green pawpaw.

Mix well with the sauce, about 1 minutes. The taste should be good now.

Add prawns and use a spoon mixing well with the salad and the sauce.

Serve immediately with white cabbage, morning glory (pak boong) or snake beans.

Good with sticky rice and fried or grilled chicken.
